Baked oatmeal is my favorite way to eat oatmeal because it’s almost like eating cake for breakfast. Baked oatmeal is a great make-ahead breakfast idea that takes no time to reheat when you’re ready to eat.

What is Baked Oatmeal?

Baked oatmeal is a method of cooking oatmeal where you combine rolled oatmeal with eggs and milk to create a muffin or cake-like breakfast bake.

The texture is like a hearty bread or muffin and it’s so good topped with your favorite toppings such as peanut butter, honey, and fresh berries.

Common Ingredients for Baked Oatmeal

The main ingredients in baked oatmeal are typically oatmeal, eggs, and milk. We’re sharing other common ingredients below for you to stock up on!

Oatmeal: we’ve made baked oatmeal with both rolled oats and quick cooking oats. You can pretty much use them interchangeably. I’d say that rolled oats give you more of a “bite” kind of texture, where quick cooking oats are more muffin-like.

Eggs: eggs or an egg replacement like a flax egg are an important component when it comes to baked oatmeal. This is what gives the oatmeal the true muffin-like texture and it’s important you don’t skip this step!

Milk:Liquid is essential in baked oatmeal and we love using almond milk. The great thing is that you can use any kind of milk 1:1 such as cows, soy, etc.

Fruit: most baked oatmeal recipes call for some kind of fruit. I love adding pureed fruit like applesauce or mashed banana so that I don’t have to add as much (if any) oil.

Sweetener: our favorite sweeteners to use in baked oatmeal are maple syrup and honey. We like to keep things refined-sugar free, which is why we don’t use white sugar or brown sugar in our oatmeal bake recipes.

Flour: some baked oatmeal recipes call for flour and some don’t. I prefer to use a little bit of flour, whether it’s oat flour or white whole wheat flour, because this also helps with that yummy, bread-like texture.

Oil:Most baked oatmeal recipes call for some kind of oil and our favorite oil to bake with is coconut oil. Don’t forget to melt it before you mix it in!

How to Make Baked Oatmeal (+ cups!)

Baked oatmeal is seriously so easy to make! You need one bowl and either a baking dish or muffin tin and you’re ready to roll!

  1. Add Dry Ingredients: place all dry ingredients into a large bowl and mix to combine.
  2. Add Wet Ingredients: add wet ingredients into the same bowl and mix again.
  3. Transfer: Transfer the batter into either a greased baking dish or a muffin tin (fill around 3/4 of the way full).
  4. Bake: Bake at 350ºF until fully cooked in the middle.

Bake Times

We recommend cooking both baked oatmeal and baked oatmeal cups at 350ºF. Here are the bake times for the two:

  • Baked Oatmeal: 30-40 minutes
  • Baked Oatmeal Cups: 18-20 minutes

Quick tip! if you find a recipe that’s for normal baked oatmeal you can almost always bake it in a muffin tin to make baked oatmeal cups and visa versa!

Store your baked oatmeal in the refrigerator for up to 5 days. While you can leave your baked oatmeal out overnight, they will last much longer in the fridge.

  • First, preheat oven to 350ºF then spray an 8x8-inch baking dish with nonstick cooking spray.

  • Place 1 large ripe banana in a large bowl. Then, use a fork to mash it until pureed.

  • Add the rest of the ingredients into the large bowl and mix until combined.

  • Transfer the batter into baking dish and bake at 350ºF for about 30 minutes or until the top begins to brown.

  • Remove from oven and let cool.*
