Really good! I forgot the sour cream but I had some small curd cottage cheese so I put it through a small hand grinder and it worked!! Delicious!

Huge hit at my holiday party. I agree with what others have mentioned: requires some time but very little effort; took longer than 20 min. to caramelize the onions. Will definitely make again and again.

This recipe has my top three criteria for a repeater: tastes great, easy to make and has no expensive/hard to find/have to buy a big jar for 1 tsp. ingredients. I have made it for my wine club and others with discerning tastes and it is a hit! UPDATE: The only chives at local supermarket were $3.00. Since only 1 Tbs goes in the dish, I left them out and put a bit of finely chopped parsley on top for color. No detectable flavor change.

This recipe lives up to all the great reviews. I made this for Christmas and it was a big hit! I ended up using Fontina instead of Gruyere, and light Mayo instead of Canola. It was rich, creamy, and decadent! As mentioned in other reviews, the onions took a lot longer to caramelize, but it was worth the wait! I also doubled the recipe with no problem. I served it with sliced, warm French bread and it was delicious!

This dip went over very well at our small group. I served it with Stacy's multi-grain chips, but only because I didn't get out to the store to get a multi-grain baguette. Very tasty! I was probably more generous with the cheese than what it called for. Additionally, I added just a bit of heat to this with two shakes of red pepper flakes.

This dip is delicious and easy to make. I have made it twice and it is always the first food item to disappear at parties. Actually forgot to buy bacon one time and it was still awesome. Highly recommend.

So delicious I couldn't believe I made it. I don't own a cast iron skillet so I just used my stainless steel one and the onions turned out fine. Definitely will be making this again and again.

I made this for a family dinner celebration and it was a big hit- even my boyfriend, who doesn't care for "stinky cheeses", scarfed this down. There isn't a "too-pungent" taste of Gruyere, but for those with a sensitive palate, Fontina should work beautifully. I used Gualtney low-fat bacon (in the green package) and light cream cheese- yet this does NOT taste "low-fat"! I served it with butter crackers, but any kind would work with this recipe. It's super easy to make. I'm bringing it to a friend's Superbowl party this weekend!

This was a big hit at the Christmas gathering yesterday! I sub'd light mayo for the canola, so it may be less than 3 pts per serving. I look forward to many more years worth of recipes from CL!

Everyone loved this. It took longer to caramelize the onions than in directions - maybe I turned down the heat too much after initial saute. Definitely worth the wait. I might use a smaller pan net time, or divide into a couple of smaller sizes to sit around.

This spread was excellent! Looks delicious, smells delicious, and it is delicious. The only thing I changed was the fat free sour cream and used low fat sour cream, and used low fat mayo. It was gone in no time! This is definitely a crowd pleaser. I will most definitely make this again.

FANTASTIC! I substituted a generous portion of creme fraiche for the sour cream, omitted the mayo, was a little more generous with the gruyere and also added in some shredded parmesan for a little more cheesy goodness. I pan-seared bay scallops and set aside, then sprinkled over the top of the melted pot of spread just before serving. Served with sliced whole grain bakery-fresh bread. Bon appetit!

I made this dip exactly as instructed, and I wouldn't change a single thing (it is rare I say this about any recipe). It's creamy, decadent and satisfying, and there is no need at all to add more cheese or bacon, even if you totally disregard calories. Furthermore its EASY and comes together in a flash. This will be a go-to for me for years to come. I served it with chunks of non-toasted French bread and it was the perfect complement.

Really tasty. The only modification I made was to deglaze the pan with 1 Tbsp of balsamic vinegar after caramelizing the onions. You'd never know it had fat free sour cream and low fat mayo in it! It was a big hit at the party.

FAQs

Can you caramelize onions with bacon grease? ›

After cooking the bacon in a skillet, we reserve the bacon fat and then use it to caramelize the onion. Twenty minutes of cooking results in a sweet, almost spreadable, bacon-y onion mixture.

What's the best pan to caramelize onions in? ›

I love non-stick pans for making pancakes and eggs, but they're not the best pick for caramelized onions. Instead, I recommend using a cast-iron skillet. As the onions cook, a delicious fond will develop on the bottom of the pan. If you scrape it up and stir it into the onions, it will make their flavor even richer.

What are some tricks to caramelizing onions? ›

It takes time, probably a solid 45 minutes, for the onions' sugars to caramelize. If your heat is too high, the onions will burn. Heat your pan over medium-low, then add your onions. Keep it on that temp for the whole process.

What pairs well with caramelized onions? ›

Caramelized onions work beautifully when piled on patty melts, cheesesteaks, sausage heros, or even just a piece of crispy bread with goat cheese. They work well on cold cuts too. Ham, mayo, and caramelized onions on some country bread?

Is it better to caramelize onions with butter or oil? ›

You can use either oil or butter to caramelize onions — but ideally, you use a combination of both! I like to use olive oil, and this cooking fat tolerates heat particularly well. Meanwhile, butter adds a distinctly rich flavor to the caramelized onions.

What not to do with bacon grease? ›

Pour it down the drain

Don't put bacon grease down the drain. It's about the fastest way to clog it up. If you pour even one batch of bacon grease down the kitchen sink, you'll likely be on the phone with a plumber before the week's over. Grease solidifies when cool and can ruin your plumbing.

Should you caramelize onions covered or uncovered? ›

Yes, you should cover the onions when caramelizing them. Covering the onions helps to trap the steam and heat, which aids in the caramelization process by softening the onions and allowing them to release their natural sugars. This results in a sweet and flavorful caramelized onion.

Why add vinegar to caramelize onions? ›

Tip: use apple cider vinegar for white and yellow onions and balsamic vinegar for red onions. Tip: the vinegar serves to deglaze the pan, adds acidity, and brings this recipe together by boosting the tangy and savory flavors of the caramelized onions. If the onions stick to the pan, that's fine.

How long should you caramelize onions for? ›

Before you start, let us be clear about something: No matter the approach, the caramelization process will take time: 15–20 minutes for French onion soup and 45 minutes to an hour for jammy, mahogany-hued onions. Fortunately, while they cook over low heat you can take care of other things.

Do you season onions when caramelizing? ›

After 10 minutes, sprinkle some salt over the onions, and if you want, you can add some sugar to help with the caramelization process. (I add only about a teaspoon of sugar for 5 onions, you can add more.) One trick to keeping the onions from drying out as they cook is to add a little water to the pan.

What do you add to onions to make them caramelize faster? ›

Absolutely. An earlier version of this recipe suggested using sugar and baking soda for even faster results.

Why did my caramelized onions turn to mush? ›

Baking soda makes the onions more alkaline, which speeds up the browning reactions necessary for properly caramelized onions. But it also weakens the pectin that holds the onion's cells together, turning what should be soft but distinct pieces of browned onion into a nauseating stew of pea-green mush.

What cheese goes with caramelized onions? ›

Melted provolone cheese

This recipe for melted gooey provolone cheese with balsamic caramelized onion is marvellous for cheese lovers. It's a cheese that melts really well and pairs amazingly with the sweetness of the onion.

Can you eat too many caramelized onions? ›

Caramelized onions can add flavor and nutrition to a variety of dishes, such as soups, stews, sandwiches, and omelets. It's also important to remember that it's okay to enjoy caramelized onions in moderation as part of a balanced diet.

Why do caramelized onions upset my stomach? ›

Onions are hard to digest largely because they contain fructans, which are not absorbed well in the small intestine. In fact, as fructans ferment, they can cause a great deal of digestive distress in the form of bloating, gas and diarrhea.

Can you caramelize onions without olive oil? ›

You will need to add more vegetable broth (1/4 cup at a time) as time passes to prevent burning, but the KEY to perfect caramelization without oil is to only add more broth once all of the previously added liquid has completely cooked off.

What fat to caramelize onions? ›

Coat the bottom of the pan with olive oil, or a mixture of olive oil and butter, if using (about 1 teaspoon per onion). Heat the pan on medium high heat until the oil is shimmering. Add the onion slices and stir to coat the onions with the oil.

What can you use instead of butter to caramelize onions? ›

You can caramelize your onion in a little bit of olive oil or plant butter, whatever rocks your taste buds but olive oil is better! It's very important not to burn them, so I start with just a little olive oil and add little splashes of water in between to help the slow cooking method along without burning.

Can you cook with bacon grease? ›

Bacon fat, created by pan-frying or baking bacon in the oven, is a not-so-secret substitute for butter or oil in nearly any recipe. In fact, salvaging it—instead of dumping it down the drain, which puts pipes and local sewer lines at risk—is compulsory, no matter what you plan to do with it.
