Onemight say I’m not actually that adventurous when it comes to food.

Maybe you think back to some of the crazy combinations you’ve seen on here: BBQ Chicken Pasta or Grilled Pizza Kebabs maybe, or Apple Crisp Doughnuts. But those recipes are for carbs: pizza, pasta, doughnuts — I can easily get adventurous with my carbs.

With my veggies? Not so much.

I like to blame this on my Dad. He is a meat and potatoes kind of guy, and he likes plain cooked corn, peas or carrots just fine. Other than that? I don’t see him getting all that crazy with his vegetables.

And so here I am, and I also like plain cooked corn, peas and carrots just fine. I like bell peppers in my pasta and on my pizza, and in a soup, chili or casserole I will eat pretty much anything. But I don’t often experiment with the ways I cook my vegetables (which is probably why the amount of vegetable side dishes I have on this here blog is a little slim).

But I saw this recipe in a Cooking Light cookbook, and I knew how fantastic the honey and citrus combo is from this Baked Honey Lemon Chicken, and so I gave it a shot.

Friends, honey + citrus in any savory dish… just amazing. It’s like the honey mellows out the acidity of the citrus and it’s basically just perfection.

Around the holidays, with Thanksgiving and Christmas so close together, we always have a ton of potlucks and gatherings going on. I love slow cooker recipes like this because they’re (a) EASY and (b) they transport to potlucks so well, and you can just plug it in when you get there, wherever “there” is. Or if you’re the one hosting, throw them in the crockpot and forget about them while you cook the rest of dinner!

  • 2-3 pounds baby carrots I used 2 lbs, and you can see there’s plenty of glaze
  • 2 tablespoons orange juice
  • 1/2 cup honey
  • 1/2 teaspoon salt
  • 2 tablespoons butter cut into pieces
  • 1/2 teaspoon grated orange zest

Instructions

  • Place carrots, juice, honey, salt and butter in a 4 quart slow cooker. Cover and cook on low for 6-8 hours or until tender (mine only took about 6 hours — if you used more than 2 lbs though, it might be closer to 8).

Could large carrots be used? Just cut smaller? I just got a box of large CSA carrits and would like to use them.

My carrots juice in the crockpot. I followed the recipe and the timing. We love crockpots and carrots! Do you think adding much more orange juice would effect the taste next time? Thanks

    • Ashley Fehr says

Hi Marla! I think you would notice if you added more, but if you like them a little saucier you can add some. You can also add a bit of water or broth if you just want more liquid.

Thanks! You can definitely make them on the stovetop, just add the ingredients to a skillet and simmer until carrots are cooked to your preference.

FAQs

Why are my carrots still hard in the slow cooker? ›

Carrots may remain firm in a slow cooker if they're not cooked long enough or if the temperature is too low. Ensure sufficient cooking time and consider cutting carrots into smaller pieces for even cooking.

When should I add my vegetables to a slow cooker? ›

Tender vegetables such as zucchini and beans can be added to your dish in last ¾ - 1 hour of cooking when cooking on High, or 2 hours if cooking on Low. Hard, starchy vegetables like potato and carrots are best added around 3 hours before the meal is done if cooking on High, and 4 hours on Low.

Can you cook vegetables in a slow cooker without liquid? ›

Normally, you can cook vegetables in a slow cooker without water or stock, but in this case, the very firm sweet potatoes, parsnips, and turnips we're using need that little bit of liquid to help them soften as much as the other vegetables used.

What vegetables are good in a slow cooker? ›

The best vegetables for a slow cooker are sturdier veggies like celery, carrots, tomatoes, onions, peppers and green beans, like we used in this recipe.

What vegetables should not be added to a slow cooker? ›

Tender vegetables

Vegetables such as peas, asparagus and peppers can become a flavorless, mushy mess in a slow cooker.

Is it better to slow cook on low or high? ›

Certainly, foods will cook faster on high than on low. However, for all-day cooking or for less-tender cuts, you may want to use the low setting. It's safe to cook foods on low the entire time -- if you're leaving for work, for example, and preparation time is limited.

When should I add carrots to a slow cooker? ›

Salt and pepper the meat, rub on the thyme and onion soup mix, and place in a slow cooker. You don't need the oil. Add all the other ingredients, set it on low, and you're done! Add the carrots: about 3 hours before you want to eat, add the peeled and chopped carrots.

Do you put vegetables on top or bottom in crockpot? ›

If you are cooking vegetables and meat together, place root vegetables in a layer at the bottom of the pot and place meat on top. For more delicate vegetables, add them last.

Can you overcook vegetables in a slow cooker? ›

Adding Delicate Vegetables Too Early

Due to the slow cooker's lengthy cooking time, most vegetables will become overcooked and mushy if they're added too soon, says Stephen Chavez, chef instructor at the Institute of Culinary Education in Los Angeles.

Do potatoes go on top or bottom of meat in a crockpot? ›

Place firm, slow-cooking root vegetables like potatoes and carrots at the bottom of the crock and pile the meat on top. Do vegetables go mushy in slow cooker? ›

Certain vegetables: Delicate herbs and veggies like fresh tomatoes, zucchini, and peas won't fare well in the slow cooker, as their individual textures may become mushy and flavorless if left for too long. If your recipe calls for these vegetables, try adding them close to the end of cooking time.

When to add carrots and celery to a slow cooker? ›

Veggies first, please!

If your crockpot is not heating evenly or maintaining a consistent temperature, it might have resulted in uneven cooking.

Why are my carrots not getting soft? ›

The simple solution to this is to add the acidic component toward the very end of cooking. You can also cook vegetables separately until they're as soft as you want them and then add them to the main pot. And look on the bright side, at least you'll never get mushy vegetables!

How long does it take vegetables to soften in a slow cooker on high? ›

I cooked these on high for five hours. Low for seven or eight would be fine as well… Longer would also work, though the vegetables would soften even more.
